Secret Ingredient
My mom could really make a fine southern fried chicken meal. It was the only way my dad would tolerate poultry. Anita brought home some chicken from the store tonight, so I breaded it in matzo meal and corn flour (not very kosher, I confess) and fried it in the wok. I added some salt and pepper to the breading along with some Old Bay. (I love that seasoning blend) But I wanted to tell you my theory on the Colonel's secret ingredient for KFC. I think the guy used apple pie spice. By the way, I served it with steamed rice flavored with nutmeg, cumin, and coriander.
